Sweet Potato Fries

I made this a lot last year but had somehow forgotten about the recipe. I made them last night to accompany turkey burgers and homemade cole slaw. I didn't think to get a picture before we devoured them. Take my word for it...this recipe is worth trying!!

2 medium sweet potatoes
1 tsp. chili powder
1 tsp. pepper
1 tsp. garlic
1 tsp. cumin
1 Tbsp. olive oil

Preheat oven to 500 degrees.
Peel sweet potatoes and slice into wedges*
Mix remaining ingredients in small bowl.
Pour olive oil and spice mix over prepared sweet potato wedges and 'toss' until all wedges are evenly covered.
Bake for 30-35 minutes (turn after 15 minutes)**

YUM!!


*if you prefer crispy, crunchy fries try thinner wedges. i usually have to decrease the cooking time by 5-10 minutes
**broil for 1-2 minutes at the very end will also help "crisp" the fries. watch carefully...they will burn quickly on broil.
