Thanks to Jim's planning and ambition we have been enjoying fresh lettuce from our garden for several weeks now. We have a pretty good variety including red leaf lettuce, romaine, four seasons lettuce, arugula, spinach, and two types of kale. It's pretty amazing, actually.
Typically we roast kale or use it in a soup but while in Charleston we had a really amazing kale caesar salad and decided to recreated it at home.
The key really is to use dinosaur kale and a good quality caesar dressing (or better yet make your own!)
